These are some of the varieties of open-pollinated
(non-hybrid) hot pepper plants that we expect to offer in 2004.

This year we offered 10 varieties of hot pepper plants.

ANAHEIM
Delicious mild hot flavor; excellent for roasting or frying. Good yields of very large chili peppers.
BIG JIM
A very large, mild to hot chile pepper growing up to 12 inches long, this is the best all-around choice for making salsas, sauces, and chili rellenos.
BLACK HUNGARIAN
Unique, black-colored fruit that are the shape of a Jalapeņo. They are mildly hot and have a delicious flavor. The tall plants also have beautiful purple flowers that make this variety very ornamental. Rare and colorful!
PASILLA BAJIO
Mild-sweet-hot fruit is dark green, turning brown as fruit ripen. This pepper is used in Mexican "Mole" sauces; tasty.
PASILLA CHILE
Generally 6 to 8 inches long and 1 to 1 1/2 inches in diameter, the rich-flavored, medium-hot pasilla is a blackish-brown color, which is why it's also called chile negro. This chile is particularly good for use in sauces.
SERRANO TAMPEQUINO
Large plant bears club-shaped fruit. Very hot and pungent; distinctive flavor.

TABASCO
This famous heirloom was introduced into Louisiana in 1848 and became the main ingredient in Tabasco Pepper Sauce. This pepper is very hot and has a delicious flavor. The plants grow up to 4' tall and are covered with small, thin peppers. Needs a warm summer or can be grown as a potted plant. Fruit ripen from green to orange, then red.
TAM JALAPEŅO
A very tasty milk Jalapeņo type, with the same delicious flavor but a lot less heat. Great yields.
THAI RED CHILLI
The fire-hot heirloom chilli from Thailand, these peppers are used in almost every dish in old Siam. Small, pointed fruit are easy to dry; bright red in color. The Thais love the pungent heat. Ornamental, very small plants are loaded with fruit.
THAI YELLOW CHILLI
The golden-yellow version of the Thai pepper; fruit is also very hot and flavorful. Used less than the red chilli, these are still seen in most every market in Thailand. Beautiful.
